Why I Love Bringing My Lunch to Work

When I lived in New York City, lunch was a big social event. Almost everyone went out to eat, and the restaurants would be filled to the brim with corporate Americans indulging in delicious gourmet foods before returning to their desks. At the end of my first internship in law school, I found myself wishing I had brought my lunch to work from the start. While I enjoyed going out with my fellow interns, I regretted the money I spent on all of those lunches. From that point on, I made a switch. Instead of going out regularly, I brought my lunch to work almost every day. While I do miss how fun eating out can be, I have come to enjoy this practice. Today I want to share why I love bringing my lunch to work, and why I think you should, too!

It Saves a Lot of Money

Of course, I think the biggest benefit to bringing your own lunch to work is that it saves a lot of money. While some restaurants do offer lunch specials, and you can get discounted meals through apps like MealPal and Ritual, lunch prices around where I work in Boston typically average around $10.00 per meal. If you eat out daily, that’s $50.00 per week spent on just lunch! To put that in perspective, I don’t even spend $50.00 on my entire grocery bill for the week. On average, I spend under $10.00 on the groceries I need to make four lunches. I do often buy lunch on Fridays, so my total lunch cost for the week is around $20.00. Thus, I am saving $30.00 per week just by bringing my own lunch to work!

It’s Better for the Environment

Bringing your own lunch to work can also be extremely beneficial for the environment. It makes me so sad to think of all the disposable plastic containers, utensils, bottles, and bags that are thrown away every single day when people buy their lunch and take it to go. When I bring my lunch to work, I am enjoying a zero waste meal every time! I purchased a set of reusable containers from the grocery store a few years ago that are freezer safe, microwave safe, and dishwasher safe. It makes meal prep extremely easy as well! The set I have was $2.00 for a pack of five containers. I found something similar on Amazon from the brand Ziploc, but definitely check out your local store. While I do use plastic containers (mainly so I don’t break anything), I’ve used the same set literally hundreds of times now! I also bring regular silverware to work and just pop it in the dishwasher when I get home.

My Meals Are Healthier

Another great benefit to bringing your own lunch is that you control what is on your plate. I know when I go out to eat, I am more apt to grab a veggie burger and fries, greasy Chinese food, or any number of dessert treats. However, when I make my own lunch, I often put together healthy meals such as salads, whole grain pasta dishes with veggies, burrito bowls, and more. Since I eat a vegan diet, I can also make sure my meals will have enough protein and other nutrients to get me through the day. Plus, eating healthier at lunch means I can enjoy a yummy dessert later that day!

It Saves Time

While preparing my own lunches does take some time on the weekend, my meal prep also saves me time and aggravation during the work week. If I go to any restaurant nearby my office, I am sure to wait in a long line and burn 10-20 minutes just waiting for my food. I would much rather spend an hour or so on Sundays making my own food than deal with the lunchtime crowd regularly. Of course, there are some apps that allow you to order your food in advance to avoid the lines, but that still requires you to leave the office to pick it up. I love to opt for a working lunch, as that allows me to use my allotted lunch break to go for a walk, run an errand, or even leave work early if needed. I also find that I am more productive when I don’t leave the office in the middle of the day to grab food.

As you can see, I am a big proponent of bringing your own lunch to work. If you usually buy your lunch, I highly recommend trying to bring lunch more often, even if it’s 2-3 days a week. You will probably be surprised at how much money you save! I really enjoy trying new recipes for lunch, and it means a lot to me that bringing my own lunch also reduces my impact on the environment. What I Ate Last Week as a Vegan | Holiday Weeks Make Meal Prep Easy

With Presidents’ Day this past week, I got to enjoy a three-day weekend. While I love having an extra day off from work, I also look forward to an easier meal prep that week. I typically do a big cooking marathon each Sunday to make enough food to last the week. Since I had an extra day off, I had more time to cook and less meals to prepare. I decided to make a few big recipes that would last me all week! If you get sick of eating the same thing every day, this method might not be for you. However, I don’t mind eating the same thing for a few days so long as it’s delicious!

This blog post is not designed to share how to eat a vegan diet. I am not a nutritionist or medical professional. Instead, it’s an example of how one vegan eats!

Breakfast

I began each day with homemade everything bagels. I use a recipe from Elephantastic Vegan that is surprisingly easy and absolutely delicious. Eating a hearty breakfast is a necessity for me. I usually top my bagels with peanut butter for some added protein in the morning, but you can learn more about vegan bagel toppings in this blog post.

Lunch

For lunches this week I made a simple veggie lo mein. All I did was cook whole wheat noodles, sauté a frozen vegetable mix, add in some chickpeas for added protein, and mix in some teriyaki sauce. This is a super easy meal, but it is delicious and can be customized to fit your tastes. It’s also very affordable! I got four lunches from this batch, and the total price was around $4.00.

Dinner

Lastly, I made one of my favorite meals for dinner this week, chickpea curry! I adapt a recipe from Say Yes that my sister-in-law shared with me. I don’t use ginger (simply because I don’t like it), and I add in one cup of coconut milk. I serve the curry over brown rice, and I add in some steamed broccoli to get some greens. This curry is so delicious and easy to make. I love the flavors, and that one batch lasts me about four meals. If you don’t like spicy food, this is a great curry to try.

#AVeganAnswers: What Do Vegans Put on Bagels?

I’m not sure what it is, but when someone finds out I’m vegan, they love asking me a lot of questions about my lifestyle: How do you get your protein? Do you eat fish? Do you eat gluten? How long have you been vegan? What DO you eat? Oftentimes, these questions are followed with a group of statements from the curious non-vegan, who wants to let me know how much they love meat, why they will never give up cheese, and how eating “rabbit food” could never suit them. While this can be annoying, I get it. Being vegan is still considered out of the ordinary, and I’m happy to answer questions so long as they are polite and coming from a place of genuine interest. I thought it would be fun to share with all of you some of the questions I get asked as a vegan in this new blog series called A Vegan Answers. Today we will be tackling a question I actually have been asked in real life: what do vegans put on bagels?

I’ll never forget the first time I got asked this question. A colleague was planning to bring in breakfast the next day at work, and she asked me what was something she could bring that was vegan. I mentioned an easy item would be bagels from Dunkin’ Donuts. I was not prepared, however, for her next question, which came after a moment of hesitation: “What can you put on a bagel?” In the moment, I almost laughed out loud, but then I realized she was serious. As it turns out, this is a question I’ve been asked by interested non-vegans a few times now. Thus, today I will answer this question, and share my favorite vegan bagel toppings!

First and foremost, vegans can put the same thing on bagels that non-vegans do! If you love to put the classic butter or cream cheese on your bagel, there are many non-dairy and vegan alternatives available today. My personal favorite butters are I Can’t Believe It’s Not Butter! It’s Vegan! and Country Crock Plant Butter. I haven’t personally tried vegan cream cheese, but I know Daiya Cream Cheeze Style Spread and Miyoko’s Vegan Cream Cheese are available at many grocery stores. There are new brands and varieties springing up all the time!

Moreover, my go-to bagel topping is peanut butter. In fact, I have a bagel with peanut butter for breakfast almost every day. I like to have a filling breakfast, and this definitely keeps me going until lunchtime. Of course, peanut butter has that added protein! You can also put your favorite jam or jelly onto your bagel. Or how about a peanut butter and jelly bagel? Yum! Want more of a sweet treat? Try Peanut Butter & Co Dark Chocolatey Dreams!

Another favorite of mine is the millennial option, avocado. I toast my bagel, mash up an avocado, and add some seasonings like salt, pepper, and garlic powder. Avocado toast is so delicious on an everything bagel! If you enjoy savory snacks, add some hummus to your bagel. Or simply make a bagel sandwich filled with veggies, vegan mayonnaise, mock meats, etc. I personally love eating Chickpea Salad Sandwiches on a bagel. It’s a hearty lunch!

Take your bagel to dinner with a vegan pizza bagel! Simply top your bagel with tomato sauce, some Daiya Cheese Shreds, and some oregano and you’ve got a delicious treat. I bake mine in the oven at 425º for about 10 minutes. You can dress up your pizza with any toppings you like!

Overall, I’m sure you can see that there are a plethora of vegan bagel toppings. Whether you want a traditional breakfast spread, or a more unique option, enjoying a bagel as a vegan is quite delicious and easy. What I Ate Last Week as a Vegan | Easy Meals to Last the Week

The past few weeks have been tough for me, as I’ve been dealing with an upper respiratory virus that really knocked me off my feet. Thankfully, I was on the mend last week, and I was able to do some meal prep. I wanted to keep it easy, so I made two recipes that I knew would last me for the majority of my meals. If you are looking to cut down on your cooking time, choosing simple recipes that yield a lot of food is always a great idea!

What’s better when you’re sick than soup?! I made a batch of my favorite lentil soup, which I enjoyed for three dinners. This recipe is from The Spruce, and I love it because it is super easy to make and also quite healthy. I ended up leaving the bay leaves in the soup while it sat in the fridge, and that added so much flavor! I think I will leave them in more often. I also had avocado toast on the side.

The other meal I cooked this week was Thanksgiving Bowls. I absolutely love the traditional side dishes served at Thanksgiving, namely stuffing, mashes potatoes, and vegetables. One of my favorite things to do is make a few sides and throw them together in one bowl for a complete meal. This time around I made cornbread stuffing, mashed sweet potatoes, and sautéed spinach with cannellini beans. These bowls are so delicious, easy to whip together, and easily customizable. I also highly recommend the Country Crock Plant Butter for the stuffing and mashed potatoes! Because I’m making a full batch of each side, I got four meals from this recipe!

To fill in the gaps last week, I enjoyed the Progresso Lentil Soup, which is actually quite delicious and an easy-to-find vegan option. Plus, it was on sale for $1.00 at the grocery store. I also had some Nature’s Path Dark Chocolate Chip Waffles for breakfast. I think you can tell I just didn’t have my normal energy last week! I definitely relied on convenience foods a bit more than usual.

Overall, I hope this post helped you find some easy recipes that you can make if you need to cut down on your time in the kitchen. Maybe you’re dealing with getting over a sickness, or you are just having a bad week and need some simple options. Whatever the case, not every week will be filled with a lot of homemade recipes, and that’s okay.

One goal I have for this blog, and my online content in general, is to share more about the food I make regularly as someone who eats a vegan diet. Now that I’ve been vegan for over three years, what I eat is normal to me. That being said, I know my diet can be quite different than the average American’s. I hope that by sharing an overview of what I eat, I can help to encourage others to try more plant-based foods. I started off 2020 with a pretty healthy week. It was my first full work week since before Christmas, and I attempted to slow down with the holiday treats. Breakfast

What I Ate Last Week | Breakfast

I typically keep my breakfasts quick and easy. Lately, I’ve been on a huge oatmeal kick. I use quick oats and mix about one cup with Silk Soy Milk Original (my favorite is the red carton). I cook it for two minutes in the microwave, and top with 100% Pure Maple Syrup and cinnamon. It might not look appealing, but it’s delicious and keeps me full until lunchtime!

Lunch

What I Ate Last Week | Southwestern Edamame Salad

I aim to make at least four lunches each week for Monday through Thursday that I can easily transport to work. One of my favorite options is this Southwestern Edamame Salad from the blog Yummy Healthy Easy. My mom actually discovered this recipe a few years ago and shared it with me. I modify it by using half a bag of frozen edamame instead of a full bag, and by leaving out both the black beans and scallions. The result is a refreshing and delicious salad. The recipe is about two lunches for me, with each one containing about 32g of protein. I love how easy and quick this salad is to make!

What I Ate Last Week | Mediterranean Lentil Salad

My other lunch option last week was the Mediterranean Lentil Salad from Yummy Mummy Kitchen. I’ve made this salad a few times, and it is a newer favorite of mine. I tend to use a regular cucumber instead of a Persian cucumber, a white onion instead of a red onion, and I leave out the feta cheese. This past week I even used Goya Canned Lentils, which saved me about 20 minutes of cooking time. What makes this salad so delicious is the homemade dressing, and I look forward to the next time I make it!

Dinner

What I Ate Last Week | Homemade Pizza

When it comes to dinners, I also try to make 1-2 recipes per week. One budget-friendly recipe that is extremely delicious is “homemade” pizza. I put homemade in quotations because I use a store-bought pizza crust and tomato sauce. I definitely want to try making my own dough to cut down on plastic packaging, but if you’re in a pinch this can be a great option. I top my pizza with Daiya Mozzarella Shreds, and with any veggies I have on hand. Last week, I added some baby spinach and Roma tomatoes. I can make one pizza for under $5.00, which is a huge discount from nearby pizza shops.

What I Ate Last Week | Minestrone Soup

My other dinner option last week was the 1-Pot Vegan Minestrone from Minimalist Baker. This soup is beyond delicious, hearty, and healthy. I use whole wheat pasta instead of the gluten free one listed in the recipe, but I otherwise follow the ingredients exactly. I get about four dinners out of one batch of this soup. I’ve also discovered that this soup is very freezer friendly, even though it contains pasta! I love having this soup in my recipe rotation, and have made a double batch before to have freezer meals on hand.

How to Eat Vegan at a Hotel Continental Breakfast Buffet | #WhatVegansEat

Happy Thursday! Today I am excited to share with you how I recently ate vegan while traveling. Many hotels offer a complimentary continental breakfast with your stay, and I definitely want to take advantage of that perk to save money on the go. While at first the breakfast buffet might seem intimidating, there are bound to be at least a few options for those of us with a vegan lifestyle. This post will share with you all of the vegan options I found at the Fairfield Inn & Suites during a recent stay.

The Fairfield Inn & Suites is a business hotel with limited amenities. In fact, the location where I stayed was very simple. There is no restaurant, bar, pool, gift shop, or anything that you might see at a hotel aimed at tourists. I appreciated that the hotel is very clean and simple, and equips the rooms with things like free WiFi and a microwave and mini fridge. If you like efficiency, the Fairfield Inn & Suites is a great place to stay. Of course, I also appreciate that a continental breakfast buffet is included! I was very happy to see a handful of vegan options that allowed me to easily fill up before heading out the door.

Let’s begin with my favorite vegan option available – the oatmeal bar! I double checked with hotel staff that the oatmeal was prepared with water, and not a dairy product like milk. I was also super excited for all of the vegan toppings available. The toppings included are dates, apricots, walnuts, almonds, raisins, and brown sugar. There is even a bottle of agave next to the oatmeal bar (no honey here!). If you stay away from sugar that may have been filtered with bone char (more info on that HERE), avoid the brown sugar. Everything else in the oatmeal bar is vegan, though! I even added some maple syrup from the waffle area to my oatmeal for added flavor.

The buffet also includes a section with fresh fruit. There are bananas and apples available daily. The two domed cases held different fruit depending on the day. This day there was cantaloupe and grapes, but I also saw pineapple and mixed fruit during my stay. Whether I wanted to add some fresh fruit to my breakfast, or grab an apple for later, I was glad that fruit was always available for me.

The Fairfield Inn & Suites also offers a variety of breads and bagels for toasting. Bagels are almost always vegan, especially plain bagels. If you want to double check the bread’s ingredients before eating them, ask the staff at your hotel. During my stay, there was always a staff member available during breakfast who was more than happy to answer any questions I had. I absolutely love bagels, so I did enjoy a couple during my stay. Toppings for toast included peanut butter and fruit spreads.

Last but not least, I wanted to quickly mention the cereal bar. While the cereals can rotate depending on the day, the varieties available during my stay were Frosted Flakes, Kellogg’s Granola, and Raisin Bran. All of these cereal varieties do contain micro-ingredients that are not vegan. That being said, I like to follow PETA’s suggestion and not worry about these micro-ingredients, especially in situations like this one where this cereal might be your only food option. You can learn more about PETA’s stance on the organization’s website HEREOf course, you have to do what you feel comfortable with, and I decided not to eat these cereals because there were other vegan options available to me at this particular hotel. I would love to see this hotel offer some dairy-free milk options, too!

In the end, I hope this blog post helped you to discover that vegan options can easily be found at a hotel continental breakfast buffet! As I mentioned at the beginning of this post, the hotel I stayed at is very basic, so there is a good chance that a larger hotel would have even more vegan options! PerfectlyFree Non-Dairy Frozen Dessert in Caramel Café | Vegan Ice Cream Review

Happy Food Friday! Today I have a review of a new-to-me variety of vegan ice cream from the brand PerfectlyFree. I love to look through the ice cream case at the grocery store to see if there are any new vegan ice creams available, and I spotted the PerfectlyFree line right next to Ben & Jerry’s. I love to try any vegan product, but I got really excited when I saw the price tag for this brand. Each pint was on sale for $2.50! That is about half the price of Ben & Jerry’s, so I knew I had to try it. I grabbed the flavor Caramel Café and got to tasting!

PerfectlyFree is a brand that is focused on providing products that are Big 8 Allergy-Friendly. Thus, if you are allergic to dairy, gluten, soy, tree nuts, peanuts, egg, fish, or shellfish, you are able to enjoy this non-dairy frozen dessert. Of course, I love that it is vegan friendly! PerfectlyFree has three flavors of ice cream: Strawberry Sundae, Caramel Café, and Fudge Swirl. I decided to grab Caramel Café since it can be difficult to find caramel products that are vegan.

Here is a look at Caramel Café. As you can see, you get a ton of caramel mixed in with the vanilla ice cream! As for how the ice cream tastes, I think it is delicious! The texture is really nice and creamy, and it definitely tastes very much like traditional ice cream. I did find this flavor to be very sweet, so keep that in mind if you are not into sugary treats. Otherwise, I cannot think of anything about this ice cream that I did not like! I even repurchased it again because I enjoyed it so much. If you are looking for a more affordable vegan ice cream, I think PerfectlyFree is a great one to try.

All in all, I’m so glad I decided to try the PerfectlyFree Non-Dairy Frozen Dessert in Caramel Café. So many of the vegan ice creams available are quite expensive, and this brand allows me to satisfy my sweet tooth without going over my grocery budget. I also love that the PerfectlyFree flavors are quite simple, so I can add in my own toppings if I so choose. I hope the brand will release even more flavors in the future!

Vegan Recipes I’ve Tried and Loved | Fall Dinner Ideas

Happy Food Friday! Today I am excited to continue on with my series where I share with you vegan recipes I’ve tried and loved. It can be really time consuming to search for the perfect recipe online. In fact, I comb through dozens of recipes before I find one that I hope will work for me! Today I’m saving you some time and sharing four fall dinner recipes I highly recommend. Each of these recipes is simple to make, but absolutely delicious. I still consider myself to be a beginner cook, so if I find these recipes manageable, there is a very good change you will, too. Let me share these vegan recipes that are perfect for fall with you!

Easy, Healthy Vegetarian Lentil Soup Recipe [LINK]

I haven’t always been a big fan on lentils, but I definitely want to find new ways to enjoy them since they are an amazing source of plant-based protein and other vitamins and minerals. I began with this super easy soup from The Spruce. If you are new to making soup, this is a great place to start. There are less than ten ingredients, and the recipe is easy to customize as well. I found this lentil soup to be very tasty!

 

Curried Potato & Lentil Soup (1-Pot!) Recipe [LINK]

I then kicked my lentil game up a notch by trying this amazing soup from Minimalist Baker. This curry-flavored soup is still quite simple to make, but it is so flavorful and packed with amazing fall foods. I left out the ginger and coconut sugar, and used sweet potatoes and green kale. I cannot stress how delicious this soup is! I highly recommend trying this if you are looking for a unique soup that is a bit on the spicier side.

Easy Chickpea Curry Recipe [LINK]

Another curry dish that I’m loving lately is from the website Say Yes. My sister-in-law shared this recipe with me, and it is an easy dinner to whip together in a short amount of time. As per my sister-in-law’s suggestion, I add about one cup of coconut milk to the curry recipe. I did use dried ginger the first time I made this, but I’m going to skip that step in the future. I’m not a huge fan of ginger, and this dish can easily go without it and still be very flavorful. I served the curry over Indian style rice (my favorite is Kasmati from RiceSelect). I really love this dinner, and it also heats up really well for leftovers. Throw in some different veggies each night to keep it interesting!

Spaghetti Squash with Creamy Pumpkin Sauce Recipe [LINK]

Last but not least is this amazing spaghetti squash dish from the blog Lean Green Nutrition Fiend. I love anything pumpkin based in the fall, and this was a fun new way to eat it! I would describe this dish as a plant-based macaroni and cheese. I, of course, made the recipe using Nutritional Yeast instead of cow’s cheese, and I left out the red pepper flakes. This isn’t a recipe I would make all the time since it has a very distinctive flavor, but I will definitely be making it again at some point. If you’re looking for a festive autumn dish, this is perfect!

So Delicious Dairy Free Coconut Milk Yogurt Alternative Review | Strawberry

Happy Food Friday! Today I have a review of a vegan yogurt from the brand So Delicious. I will be honest with you – I have never liked eating yogurt, but I wanted to give the vegan variety a try to see if it tastes different. I had a coupon for So Delicious, and I decided to grab the Coconut Milk Yogurt Alternative in the flavor Strawberry to try. Let me share my thoughts on this product with all of you!

The So Delicious yogurt is coconut milk based. I was quite surprised to find that this container has less than one gram of protein, but 15 grams of sugar. That’s quite disappointing! I know many people enjoy eating traditional yogurt for breakfast because it is high in protein, but this one does not pack the same about of nutrients at all. I am glad to see that the yogurt does have 20% each of calcium, vitamin D, and vitamin B12.

I picked up the strawberry flavor of yogurt. As soon as I opened the package I smelled that distinctive yogurt smell. Keeping in mind that I did not eat much yogurt as a non-vegan, I find this So Delicious Yogurt Alternative to taste exactly like traditional yogurt. The strawberry flavor is nice, and the consistency is the same as non-vegan yogurt. Unfortunately, that means I personally do not like this product, but I am glad that vegans who do love yogurt will not have to miss out on a favorite food!

Overall, I’m quite impressed that the So Delicious Dairy Free Coconut Milk Yogurt Alternative tastes just like traditional yogurt. I do wish it contained much more protein and a bit less sugar, but if you are a yogurt lover who wants to go vegan, this is a great option for you! Vegan Recipes I’ve Tried and Loved | Summer 2017

Happy Food Friday! This past year I’ve spent a lot of time finding easy and delicious vegan recipes online. It can take a lot of searching to get that perfect recipe, so I thought I would save you some time and share some of my favorite recipes with you! If you are looking for some simple vegan recipes that anyone will love, this is the post for you. Let me share with you the delicious recipes I’ve tried and loved this summer.

Super Easy Vegetarian Chili Recipe [LINK]

I was never a big chili fan growing up because I’ve always disliked ground beef. Now that I love beans, though, chili seemed like the perfect dish for me! This recipe from The Spruce is really easy and beyond delicious. I do not put in any of the ingredients listed as optional, but otherwise I stay true to the recipe. Plus, this chili freezes really well! I made a double batch and froze half of it so that I could have meals ready to go on busy days.

 

No-Fuss Vegan Cornbread [LINK]

Of course, I had to make cornbread to go with my chili! This recipe from Food52 stays true to its name – it really is no-fuss. I follow the recipe exactly and it comes out really well each time. This cornbread also freezes well, so if you are cooking for 1-2 people just save some of this for later! I’ve always loved cornbread, and this one is absolutely delicious.

Healthy 5-Ingredient Granola Bars [LINK]

Next I tried a breakfast food, and that is granola bars from Minimalist Baker. I’ve never made granola bars before, and this recipe made it really simple. I followed the recipe exactly, but also added in about 1/3 cup of peanuts that I had on hand. My bars came out great, but I used a 9×9 pan instead of an 8×8, so they did fall apart easily in some spots. Nonetheless, they are beyond yummy, and I love pairing a bar with fresh fruit for breakfast.

One Pot Vegan Fettuccine Alfredo [LINK]

Last but not least is my favorite of the bunch, an absolutely amazing Vegan Fettuccine Alfredo from Neurotic Mommy. I found this recipe on Pinterest, and knew right away I needed to try it. I cannot stress to you how delicious this pasta dish is! I’ve already made it twice, and I know it will be a part of my regular dinner rotation. The one change I make to the recipe is that I keep the stove on medium-high as opposed to medium-low when cooking the pasta. Otherwise, the pasta does not absorb the sauce. That being said, if you are craving some creamy pasta, you need to try this now!
